This is Sushi wrapped with ‘Kaki (sharon fruit/Japanese persimmon) and was devised in the Edo period as an way of keeping fish fresh.
The idea was to wrap the fish e.g. mackerel and salmon, in sushi rice and then wrapping it again in ‘Kaki’ leaves which have anti-bactericidal properties.
As Nara is landlocked, fresh fish was a precious commodity and Kaki was found to be the perfect way of preserving it. As a result of wrapping it the leaf, a unique flavour is added to the Sushi.
